Cutwater Mezcal Reposado is the oak-rested expression from Cutwater's Durango mezcal program — produced from wild Maguey Cenizo (Agave durangensis) growing in the harsh landscape of Durango's Mezquital municipality, roasted in traditional volcanic rock pit ovens, open fermented with the area's wild yeasts, and then rested in oak to add structure and complexity to the already-distinctive earthy and smoky agave character.
The Durango mezcal tradition is distinct from Oaxaca's — the landscape of scorpions and owls that Cutwater references reflects the genuinely harsh, high-altitude terrain where Maguey Cenizo grows wild. The volcanic rock pit roasting and wild yeast open fermentation preserve the regional character of both the agave and the environment, and the oak resting adds a layer of complexity to the unaged Joven's raw agave character.
