Fettercairn has a traditional distillery set-up with an open-topped mash tun (producing cloudy wort), wooden washbacks and small stills - all of which should produce a dense, nutty, oily distillate. However, Fettercairn also has additional (quirky) cooling-rings attached to the top of the swan necks, which sprays cold water down the sides of the still, aids reflux and helps the spirit lean toward a lighter style.
Mainly used for blends, distillery bottling began to appear in 2018 - with the ages ranging from 12 - 50 years.
After years of maturing in American white oak ex-bourbon barrels, the 12 Year Old is the colour of sunlight and amber honey.
Nose: Stone fruit and creamy milk chocolate emerge initially.
Palate: Vanilla and pear, with soft spices. Warm gingerbread with vanilla icing.
Finish: Refreshing nectarine and tropical fruit linger from the nose. Subtle roasted coffee, clove, and ginger. A memorable finish of sultanas and black toffee.
