Made in Portland, Oregon from 100% malted barley, this whiskey is an exceptional example of the American Single Malt style. The barley is fermented with an ale yeast before distillation in a double pot still, and it is aged in new charred American oak barrels. Malted nuts and honey dominate the nose, while the palate is full with cinnamon porridge and spices from the barrel aging. The spirit is sweet but well-spiced, like an oatmeal cookie, with a long and satisfying finish where the ale yeast shines brightly amongst the other flavors.
